According to data from the Tea Research and Extension Station, the extraction rates of tannins, caffeine, and bitter/astringent compounds in tea are directly proportional to water temperature and steeping time. The higher the temperature and the longer the steep, the more bitterness and caffeine will be released into the tea. Cold brew tea uses low-temperature water to steep the tea slowly, resulting in a smoother, sweeter, and more refreshing flavor.
Since the human mouth contains various microbes and bacteria, it’s important to finish drinking tea quickly once it’s been sipped directly from the container, whether hot or cold. If you plan to make a large batch of cold brew tea to enjoy over 2–3 days, it’s recommended to remove the tea leaves after steeping, and pour out only what you need each time. Any leftover cold brew tea should be stored in the refrigerator. Homemade cold brew tea is sugar-free, guilt-free, delicious, and healthy!
