發酵度 ☆☆☆☆☆綠茶，也就是一般人口中的「生茶」、「未發酵茶」，是最富含兒茶素的茶種，為了要讓茶葉停止發酵，在摘採之後的關鍵為「殺菁」的製程，台灣目前的製程上多以炒菁方式：使用大鍋或是機器來將茶葉炒熟，但這種方式容易造成營養素流失及苦澀的口感。三余堂所選用的蒸菁綠茶是採用與日本抹茶雷同的製作方式，由超過一甲子老茶廠製作：以高溫蒸氣來將茶葉急速蒸熟，除了可以避免營養素的流失，茶葉鮮活的口感也能完整地保留下來。 蒸菁綠茶的茶湯滋味清爽甘甜，有著近似抹茶的滋味; 且台灣茶品農藥殘留標準尚比日本嚴格，喝得順口更安心。
